We are one of the first to offer - The Withersbrook Blue!
This is a delectable raw milk blue cheese immersed in ice cider.
Crafted by Jasper Hill Farm, this unique cheese spends 60 days maturing in their cellars, developing distinctive veins of blue flora.
The ice cider used in Withersbrook Blue is crafted from locally grown apples, which have been stored outside for a freezing Vermont winter. The result? A sweet libation with fruity, lactic notes, hints of honey, and roasted hazelnuts, followed by a lingering savory finish.

The richly dense texture and elegant complexity would unfurl upon a thyme and pepper crusted ribeye. For an after-dinner treat, pour a glass of Vermont Iced Cider and enjoy another wedge with dulce de leche.
Serving Suggestions for this new cheese:
· Plain: Enjoy a slice on its own to savor its rich, creamy texture and bold flavor.
· Iced Cider: Pair with a glass of ice cider since it’s immersed in ice cider to complement the cheese.
· Grilled Ribeye: Our store favorite! Just put it on the top of your hot Certified Angus Ribeye!
· Salted Caramel: drizzle it over the top
