April's featured Cave To Co-op cheese is Vermont Herdsman from Parish Hill Creamery, which specializes in seasonal, raw milk artisan varieties like this Asiago-style herdsman.

Made with milk from the cows grazing at nearby Elm Lea Farm at The Putney School, it's then aged at least 12 months to develop a full, slightly sharp flavor with hints of pineapple and hazelnuts.
