    • Mt. Alice is a creamy and approachable bloomy-rind cheese from Von Trapp Farmstead, and it pairs beautifully with a variety of accompaniments. Here’s how to best enjoy it:

Bring to Room Temperature: Remove Mt. Alice from the fridge about 30 minutes before serving. This allows the flavors and texture to fully develop.
      Pairings:
o Serve with a crusty baguette or artisan crackers to complement its creamy texture.
o Add fresh fruit like sliced apples or pears for a sweet and tangy balance.
o Pair with honey or fig jam to enhance the subtle flavors.
o A glass of white wine, such as a crisp Sauvignon Blanc or Chardonnay, makes a fantastic match.
Savor the Rind: The edible bloomy rind is mild and earthy—don’t skip it! It adds depth to the experience.
Portion Gently: Use a soft cheese knife or simply a spoon to cut and spread it; Mt. Alice’s creamy consistency deserves a delicate touch.
Enjoy the simplicity of this cheese, either on its own or as part of a larger cheese board.

    • OMA is a washed-rind raw cow’s milk cheese from Von Trapp Farmstead, offering a rich, earthy, and buttery flavor with a creamy, soft texture. To fully enjoy OMA, here are some tips:
Bring to Room Temperature: Take OMA out of the fridge about 30 minutes before serving. This enhances its complex flavor profile.
      Pairings:
o Try it with crusty bread, hearty crackers, or even a slice of rye to balance its creamy texture.
o Add savory accompaniments like pickles, olives, or grainy mustard to highlight its nuttiness.
o Sweet options like dried apricots, fig spread, or even a drizzle of honey can also beautifully contrast its bold flavor.
      Beverage Pairings:
o Pair OMA with a Belgian-style ale or a farmhouse cider. Their subtle tartness complements OMA’s creamy and nutty notes.
o A light-bodied red wine or a crisp white, such as Pinot Noir or Riesling, also works beautifully.
Enjoy the Rind: The washed rind is an integral part of the cheese and adds a delightful complexity. Don’t be shy—taste it!
Simple Enjoyment or Cheese Board: OMA shines on its own but also holds its own among a mix of cheeses on a board. Add nuts and fruits for an enhanced cheese platter experience.
With its bold yet approachable profile, OMA is truly a crowd-pleaser!

    • Mad River Blue is a rich and complex blue cheese from Von Trapp Farmstead, known for its creamy texture and balanced tang. Here’s how to make the most of it:
Serve at the Right Temperature: Like other artisanal cheeses, take Mad River Blue out of the fridge about 30 minutes before enjoying it. This allows its creamy texture and bold flavors to shine.
      Pairings:
o Savory Matches: Pair with roasted nuts (like walnuts or almonds), crusty bread, or hearty crackers.
o Sweet Contrasts: Serve with dried fruits such as figs or dates, or drizzle with honey to enhance its natural sweetness.
o Fresh Accents: Fresh pears or apples add a crisp and refreshing contrast to the cheese’s earthy intensity.
      Beverage Pairings:
o A glass of dessert wine, such as Port or Sauternes, complements Mad River Blue’s creamy and tangy profile.
o For beer lovers, opt for a stout or barley wine for a harmonious pairing.
o A bold red wine, like Cabernet Sauvignon, or a sweet Riesling also works wonderfully.
      In Recipes:
o Crumble it over a salad with arugula and candied pecans.
o Incorporate it into a creamy blue cheese dressing or sauce for steaks.
o Melt it into a burger or a flatbread pizza for a gourmet twist.
Mad River Blue is perfect for those who enjoy a bold yet nuanced blue cheese experience.
